  • For the meatballs:
  • 1 slice wholemeal bread
  • 2 tbsp skimmed milk
  • 1 egg, beaten
  • 500g turkey breast mince
  • 2 cloves garlic, crushed
  • I medium onion, grated
  • 1 red pepper, very finely chopped
  • 1 tsp oregano
  • spray oil
  • good pinch pepper
  • To make the eyeballs:
  • 2-3 thin slices red pepper
  • 5-6 pitted black olives
  • 100g light Mozzarella, cut into 20 small discs
  • 20 cocktail sticks

  • You could use pork, beef or lamb mince for the meatballs. Or you can use minced fish such as cod.
