- For the meatballs:
- 1 slice wholemeal bread
- 2 tbsp skimmed milk
- 1 egg, beaten
- 500g turkey breast mince
- 2 cloves garlic, crushed
- I medium onion, grated
- 1 red pepper, very finely chopped
- 1 tsp oregano
- spray oil
- good pinch pepper
- To make the eyeballs:
- 2-3 thin slices red pepper
- 5-6 pitted black olives
- 100g light Mozzarella, cut into 20 small discs
- 20 cocktail sticks
