- 8 small, boneless chicken thighs (720g)
- 3 allspice berries
- 1tsp ground nutmeg
- 1tsp ground cinnamon
- 1 small red onion, finely grated
- 4 spring onions, trimmed and finely chopped
- 1 red chilli, deseeded and finely chopped
- 1 lime, finely grated, zested and juiced
- For the pineapple salsa:
- 1 medium-sized fresh pineapple, rind removed, or 8 rings of canned pineapple
- 1 cal oil spray
- 1 green chilli, deseeded and finely chopped
- 1 lime, juice only
- ½ small red onion, finely chopped
- Small handful fresh coriander, finely chopped
- For the carrot and apple slaw:
- 2 carrots, peeled and coarsely grated
- 1 Granny Smith apple, cored and coarsely grated
- 2tsp apple cider vinegar
- 1tbsp sunflower seeds
