  • 1 kilo fresh mussels (to yield 250g mussel flesh)
  • 1 tsp oil
  • 1 small red onion, finely chopped
  • 1 red pepper, finely chopped
  • 6 cloves garlic, crushed
  • 80g frozen peas, defrosted and mashed
  • 10g parsley, finely chopped
  • good pinch black pepper
  • 50g bread crumbs (30g for stuffing, 20g for topping)
  • 20g Parmesan, finely grated.
