  • 15g vegetable oil spread
  • 15g plain flour
  • 100ml milk
  • 25g strong Cheddar or other hard cheese, grated
  • 1 tsp English mustard
  • 2 tbsp chopped mixed herbs
  • freshly ground black pepper
  • 2 thick chunks cod fillet (or any other chunky white fish) approx. 150g each

Recipe tips

 

  • Try using different herb combinations, such as parsley and dill or coriander and chives.
  • This topping is suitable for mackerel fillets, haddock, river cobbler or tilapia.
  • You could allow the sauce to cool then spread over the fish and refrigerate until needed.
  • Remove from the fridge for 10 minutes before cooking as normal.
